We work with local Maui growers to find seasonal fruit at its absolute peak. Maui's agricultural diversity is incredible—from Maui Gold’s large-scale pineapple operations in Hali'imaile, to small family farms, and even backyardgrowers who tend their little patches of paradise. We source from this amazing network including the lilikoi we grow right on our own Pukalani property, where the cooler elevation creates perfect conditions for these aromatic passion fruits. Each piece of fruit tells the story of Maui's rich farming heritage.

Dehydration
use a low-and-slow approach, gently drying our fruits at temperatures between 115-135°F. Why so low? Because heat is flavor's enemy. This process can take anywhere from 8 to 27 hours, depending on the fruit. It's a lesson in patience—but trust us, it's worth every minute and you would’t believe how good it smells!
